“Ladies and gentlemen, I’m a cook!” So proclaim the labels of Stubb’s BBQ sauce, a Texas gem now available all over the country. Christopher B. Stubblefield, known to his friends as “Stubb,” opened his first restaurant in Lubbock in 1968 making hickory smoked BBQ topped by his special sauce. The small eatery had a jukebox filled with vintage blues music, and local musicians gravitated to the good food, cold beer, and charismatic proprietor. Just as friends and local Lubbock musicians Terry Allen, Jesse Taylor, and Joe Ely followed their muse to Austin, so did Stubb, who had a few different joints over the years. Although Stubb died in 1995, his spirit survives in the restaurant and live music venue bearing his name. Stubb’s Restaurant features an intimate indoor club, and a large outdoor stage. Just as his regulars in Lubbock and Austin did for years, you can enjoy his smoky meat and tangy sauce while listening to The Reverend Horton Heat, Patty Griffin, or Darden Smith.
